Known as the revived rice varietal, the rice used in this Sake - Watari Bune, is a pure strain that was brought back to cultivation after its popularity in the 1920’s and 30’s came to an end. Lively and complex, this full-flavoured sake is packed with an explosive aroma of floral and fruit notes. As a Junmai Ginjyo, it carries an uncommonly bright and snappy acidity, but with brilliant control of aggressiveness. It is an expressive Sake till its finish and an ideal food-pairing drink with any Izakaya recipes of soy sauce base. |
